I might have to stay the night in Amsterdamm sometime during the Winter break. And just in case, I'm looking for a room now; but the thing is that I am not sure if downtown will be safe, or if it will be better to stay closer to the Airport. Do you know of a site where I could get this kind of info? or of there are any non-hotel options in the Netherlands worth considering?

i live not in amsterdam, so treat my words with some caution - but i thinks it is not unsafe to stay in the city itself. or, at least there is no difference between the city itself and the airport area (the latter can be just more expensive).
i don't really know about any other option than a hotel - i mean, there are perhaps b&b rooms somewhere but i'm not aware of.
the city is very packed around x-mass and new year, so be quick with booking. you don't have to book a hotel right in the center, the city is very small (less than a million people), and the transport is quite good, so you could easily stay off-center and be fine.
be careful, there are 'relatively' cheap hotels/hostels right in the middle of the city, but you will discover that they are dangerously close to the red light district and the like. that kind of experience i am not sure you will like much.
but in general hotels in amsterdam are just fine.
there are a couple of communities here which are worth to quest too, like go_dutch or nl_ru (the latter is, technically speaking, of russian people but they all speak english too). try ask there, you may get an answer from the 'true amsterdamers'.
